How to Make Homemade Chocolate Candy for Halloween

The Mayans considered it a delicacy for the elite, and the Swiss set the standard for how it's made. Once the domain of chocolatiers, the art of making chocolate is going DIY with easy homemade recipes even a novice can handle.

If you're new to the game, skip the molds and try this dark chocolate caramel almond candy with sea salt recipe—it's the perfect Halloween treat to balance all that packaged candy the kids will bring home. All you need is a cookie sheet and the final results don't have to be a perfect shape.

Dark Chocolate Caramel Almond Candy with Sea Salt

Prep Time: 30 minutes Cook Time: 10 minutes Serves: 12

Ingredients: 
2 cups whole salted almonds
1 cup butter
2 cups light brown sugar
15 ounces dark chocolate chips (about one and a half packages)
6 ounces fresh blackberries (or substitute fruit or dried fruit of your choice)
sprinkling of sea salt (optional)

Preparation: 
1. Lightly butter a cookie sheet or parchment paper on a cookie sheet
2. Sprinkle salted almonds over the cookie sheet, evenly distributed but slightly away from the edges; set aside
3. Slice blackberries so they are coin shaped (one or two slices per berry, depending on size) and add to nuts, sprinkled throughout the pan
4. Put butter and brown sugar in a saucepan
5. Cook together over medium high heat until mixture comes to a boil, stirring constantly
6. Continue cooking for 10 minutes, scraping sides and stirring constantly (If desired at about 8 minutes, do the cold water test, where you put a drop of the mixture into a cup of cold water; if it immediately ribbons and forms into a soft ball, it is done).
7. Once done, immediately pour over nuts, covering them all, using a spatula to spread evenly. Next, melt dark chocolate (if using a microwave, it will take 2-3 minutes; check it every 30 seconds and stir so chocolate will not burn).
8. Pour chocolate over nuts, fruit and caramel
9. Sprinkle lightly with sea salt
10. Once cooled, simply break apart into pieces
